Recipe | Insalata Caprese




After a big weekend travelling by coach up and down the coast for my cousin's wedding the last thing I wanted to do come Sunday night was cook dinner. Tara was over and suggested bruschetta when this dish (that we love to eat at our favourite Italian restaurant, Vapianos) sprang to mind. It is so simple to put together for those times when you really can't be bothered but can't bring yourself to eat junk OR when you're looking for a quick easy starter dish for a dinner or party. 

Ingredients
fresh bread, sliced (I used a tiger-style baguette)
buffalo mozzarella, sliced
fresh tomato, sliced 
pancetta, sliced (optional)
fresh basil
cracked pepper and salt
good quality balsamic vinegar and olive oil

All of the quantities in this recipe will depend on how many people you want to serve and for what size meal (canapés, entree etc).  

The steps are so easy and minimal that you could whip this together in minutes (especially if you had the cold ingredients sliced and sitting in the fridge. 

All you have to do is put it together like an open sandwich. One slice of bread, a slice of tomato or two, a slice of cheese, a basil leaf and cracked pepper and salt to taste. A drizzle of balsamic and olive oil over the top and you're done. Continue doing this until you have your desired quantity. If you're making a few wait until the end to crack the salt and pepper and drizzle the balsamic and olive oil .
